One potential solution is The Old School's move towards zero waste. Their farm and restaurant co-exist side by side, they have a Community Supported Agriculture (CSA) program and work alongside Millar Rich, a foundation helping those with disabilities.

This episode Drew addresses the issue that the majority of restaurants in the U.S. are totally reliant on industrial farming to source their food. With the number of restaurants in this country at around 650, 000, the environmental and health issues associated with large scale farming are increasing exponentially with the growth of new restaurants. One potential solution is R Kitchen in Charleston, SC where they grow as much of their food right outside their restaurant in the parking lot, on their sidewalk and with their hydroponics system at their new location. They also source from a local farm where Executive Chef/Owner Ross Webb gets access to grow his own food.

This episode Drew addresses the issues like soil depletion from over farming, the increasing price of irrigation water and a limited growing season for most crops. We are faced with the dilemma of feeding the population with affordable, nutrient dense food year round. The changing weather conditions we are experiencing, from freezes in the Southeast to droughts in California present concerns for traditional farming methods, because they are at the mercy of these unpredictable climate changes. One potential solution to these problems is Billy's Botanicals in Richmond Hill, GA where Billy Dugger has created an aquaponics system that provides fresh produce to some of the best restaurants in Savannah, GA. They also provide, process and package local seafood on site.

This episode Drew addresses the issue that the majority of hotels in the US source from large scale factory farming for their restaurants. With the number of hotels growing in the US this results in an increase in unsustainable practices to supply them. One potential solution to the problem is 22 Square Restaurant & Bar in the Andaz Savannah a concept by Hyatt, because of their farm to table vision. They compost waste, source from the local region and even grown some of their food on the hotel rooftop. The Andaz Savannah has done a fantastic job on incorporating a farm to table restaurant in the hotel, thus minimizing more waste, providing fresh healthier food and supporting the local economy.

Sweetwater Organic Community Farm
Tampa Bay, FL

This episode Drew addresses the issue that the cost of eating an organic locally sourced diet is difficult for many to afford. One potential solution to the problem is Sweetwater Organic Community Farm. They grow an abundance of organic produce and provide them at a lower cost for families with a lower socioeconomic status allowing one with a SNAP card to get $40 worth of fresh organically grown goods for $20 through a program called Fresh Access Bucks (FAB) created by Florida Organic Growers. They have an excellent education program where they allow students to live on site in a few different houses, have interns working alongside the veterans of the farm and want anyone to stop by and get involved. It is not going to solve the issue of cost for organic locally sourced nutrient dense foods over night, but hey are making a step in the right direction. If you are in Tampa, stop by this fantastic place!
